Freezing a casserole-style entree is a fantastic way to plan ahead and it's easy! To freeze an unbaked chicken enchilada casserole: assemble the chicken enchiladas in a pan just as you were going to bake it. Instead of placing it in the oven, freeze it. Wrap it in aluminum foil, and then in freezer-quality plastic wrap. Freeze it for up to 3 months. To cook it, bake at 375 degrees for about 50 minutes. To freeze a baked chicken enchilada casserole: Cook according to directions and allow it to cool completely - at least 30 minutes. Wrap according to the directions above. To reheat it, bake at 375 degrees for 35 minutes. There is no need to thaw.
